Instructions
Bring some water to boil - Dress meat into shape with strings
Place meat joint into the boiling water to blanch, reboil, skim the scum(xx)
Add Bouquet garni, onion, salt and pepper and simmer gently for 2 - 3 hours
To check doneness pierce meat with a Roasting fork ( if it is easy to penetrate without undue pressure it is cooked )
Note:
(1) the duration of cooking depends very much on the meat quality and the shape of the cut chosen
(2) Boiled beef can be served with the following sauces : Horseradish-, Herb-, Vinaigrette-, and chive cream sauce
(3)If the water is cloudy discard and proceed with a new boiling water

1.8 kg Beef (Shoulder, Leg, thin Flank, Brisket, Neck ) ready trimmed
1 Bouquet garni, medium size (without onion)
1 Studded Onion (onion ,cloves, bay leaves)
10 Peppercorns, black crushed
