Lyonnaise Potatoes
Lyonnaise potatoes are a classic French dish made from thinly sliced potatoes and onions, pan-fried in butter until golden and crispy. Wash the potatoes and boil them without peeling, in salted water until ¾ cooked only.
Drain and allow to cool on a tray *** , then peel them completely.
Cut across into slices of about 4mm thickness.
Fry the sliced onions slowly to become brown and then keep aside.
Heat the butter in a large frying pan and fry the potatoes by tossing them frequently until light brown.
Add the onions and salt and now toss together.
Arrange and sprinkle with some parsley.
