Apple filling

  1. In a Fry pan heat Butter and glaze Onions, add Apples & Sugar and fry until sugar has caramelized

  2. Add Sage, Orange skin & Juice and cook shortly again

  3. Add as much Bread crumbs until mix is dry - allow to cool


Loin

  1. Split loin lengthwise in the centre and spread filling evenly in, then close up and dress with strings

  2. Place a suitable roasting pan on the range and heat the fat.

  3. Season the loin, place it in the hot fat and gently seal it all round

  4. Roast the joint at medium heat for about 25 min. on medium low temperature

  5. Now with a brush baste the loin every few minutes until we have a shiny thick coat and the meat is done

  6. Remove the Roast, drain away the fat and dilute the sediments with the stock to obtain a gravy

  7. Carve the roast across the grain into thin slices; arrange on gravy

Apple filling

  • 30 gr Butter

  • 120 gr Onions, white sliced

  • 350 gr Apples, peeled, cored sliced

  • 40 gr Brown Sugar

  • little Sage leaf chopped

  • 1 Orange (Zeste & Juice)

  • Some Bread crumbs, white

Loin

  • 1.8 kg Pork loin, boneless trimmed

  • Salt

  • Pepper

  • 50 gr Cooking fat or oil

  • 3 dl Brown stock

  • Basting Marinade

  • 30 gr Dijon Mustard

  • 50 gr Honey, liquid

  • 40 ml White wine
