Arly Potatoes
Early potatoes, also known as "new potatoes," are a type of potato harvested before they reach full maturity. They are typically smaller in size, have thin, delicate skins, and a sweeter, creamier taste compared to fully matured potatoes. Early potatoes are often planted in early spring and harvested in late spring or early summer. They are ideal for boiling, steaming, or roasting and are commonly used in salads or as a side dish.

Instructions
Boil the potatoes in saltwater until half cooked, drain water .
Wrap the potatoes in aluminium foil and finish by baking them in the oven.
When potatoes are just done, cut lengthwise into halves.
Remove the inside leaving a firm border line and mash it together with the extra potatoes
Add the ham (or bacon), cream, chives, parsley and eggyolk and season to taste.
Use a piping bag with a plain nozzle and dress the potatoe mixture into the shells
Sprinkle cheese on top and bake shortly in the oven to bake and overcrust

30 gr. Ham (or Bacon) cut to fine Brunoise (Bacon fried)
40 ml Cream
10 gr. Parsley chopped
10 gr. Chives chopped
1 pinch Salt
1 pinch Pepper
1 Egg yolk or egg white
1 pinch Nutmeg
40 gr. Cheese grated
