Mix the rolled oats, chopped nuts, seeds, salt, and cinnamon (if desired) in a large bowl.
Combine Wet Ingredients:
In a separate bowl, combine the honey (or maple syrup), melted coconut oil, and vanilla extract by whisking them together.
Combine Mixture:
Pour the wet mixture over the dry ingredients. Stir well until all the dry ingredients are evenly coated.
Spread on Baking Sheet:
