Chicken Cacciatore

Chicken Cacciatore is a classic Italian dish that translates to "hunter's chicken." It features chicken pieces simmered in a rich tomato-based sauce with ingredients like onions, bell peppers, garlic, mushrooms, and herbs such as rosemary or oregano. Sometimes, wine is added for extra depth of flavor. This hearty and rustic dish is often served with pasta, rice, or crusty bread.

Instructions

  1. Heat oil in a frying pan, season chicken and fry light brown all round

  2. Remove Chicken and fry onions and garlic, deglaze with wine and then transfer chicken to a stewing pan.

  3. Add vinegar, Tomato paste, Sugar, Basil Tomatoes and Stock and stew until done ( ½ hour approximately )

  4. Present Chicken pieces on Plate Platter and finish Sauce: add Anchovies, Olives and half the Parsley and simmer for a short while, and then coat Sauce over Chicken sprinkle with remaining Parsley

  • 50 ml Olive Oil

  • 1.5 kg Chicken , ready cut as for stew

  • Salt

  • Pepper

  • 150 gr Onion chopped

  • 10 gr Garlic chopped

  • 1.5 dl White wine

  • 1 tbsp White Wine Vinegar

  • 1.5 dl Chicken Stock

  • 400 gr Tomato flesh chopped

  • 20 gr Tomato Paste

  • 1 Bunch Basil, fresh

  • 5 pinch Sugar

  • 5 Anchovies fillets chopped

  • 60 gr Black Olives, pitted cut to halves

  • 5 sprigs Parsley chopped coarsely
