Instructions
Create a pocket lengthwise in the Breast (from the Drumette to tip)
Use a Piping bag and press the filling into the cavity
Heat Butter, season Breast and shortly panfry all round to seal (keep breast under cooked ) - allow to cool
Roll Puff paste to 4 mm thickness and cut with a Trellis cutter to a net
Wrap Spinach around the Breast and then wrap the Trellis (tuck Paste ends with egg wash under the Breast )
Place Breast onto a lightly oiled Baking tray, brush with remaining
Egg wash and gently bake for about 20 minutes until just done and golden brown

2 Spinach Leaves, blanched, drained, and dried
100 g Puff Pastry
