Instructions

  1. Create a pocket lengthwise in the Breast (from the Drumette to tip)

  2. Use a Piping bag and press the filling into the cavity

  3. Heat Butter, season Breast and shortly panfry all round to seal (keep breast under cooked ) - allow to cool

  4. Roll Puff paste to 4 mm thickness and cut with a Trellis cutter to a net

  5. Wrap Spinach around the Breast and then wrap the Trellis (tuck Paste ends with egg wash under the Breast )

  6. Place Breast onto a lightly oiled Baking tray, brush with remaining

  7. Egg wash and gently bake for about 20 minutes until just done and golden brown

  • 8 g Butter

  • 1 Skinless Chicken Breast with drumette attached

  • 40 g Chicken Filling (Reference BPK 14)

  • 2 Spinach Leaves, blanched, drained, and dried

  • 100 g Puff Pastry

  • Egg Wash

  • Salt

  • Pepper
