Instructions
1. Heat the butter in a stewing pan. Season the chicken pieces with salt and pepper, and lightly dust them with flour.
2. Place the chicken pieces into the hot butter and sweat them without allowing them to color. Add the chopped onions, cover the pan with a lid, and continue sweating for 5 minutes.
3. Add the flour and mix thoroughly.
4. Incorporate the wine and the stock.
5. Bring to a boil again, add the bouquet garni, and simmer in a moderately hot oven for approximately 15 to 20 minutes until tender.
6. Remove the chicken pieces from the sauce and keep them warm.
7. Strain the sauce through a mesh strainer, reboil, and skim off any fat if present. Add lemon juice and cream. Taste and adjust the seasoning if necessary.
8. Arrange the chicken pieces, pour the boiling sauce over them, and garnish accordingly.
