Cut breast into two, butt and expand into even pieces.
Heat butter and glaze onions, cool, add basil and mix with the two cheeses, eggyolk and sundried tomatoes.
Sprinkle bread crumbs.
Season breasts, spread mixture , place asparagus tips and roll. Place streaky bacon round at the centre and tie with a string. Season on top
Shortly panfry and place in a baking mould containing some near boiling chicken stock
Cover with Alufoil and poach in the oven at a medium heat for 20min.

120 grams Onions chopped
10 grams Garlic chopped
250 grams Cream cheese
250 grams Goat cheese
2 bunches Basil chopped
50 grams Sundried Tomatoes chopped
20 grams Bread crumbs fine
7 Egg yolks
10 pieces Asparagus tips (neck peeled) Pre-cooked briefly
10 slices Streaky bacon or Parma Ham
600 ml Chicken stock approximately
Oil or Chicken fat
