Coconut Pilau
Coconut pilau is a fragrant and flavorful rice dish cooked with coconut milk, giving it a rich and creamy texture. Heat oil in the stewing pan and gently sauté the onions and coconut flesh, then add the ginger and spices, and sauté again.
Add the rice, continue to sauté, and pour in the coconut milk, stock, and lime juice.
Bring the rice to a boil, add salt, and steam it with greaseproof paper and a lid in the oven for about 15 minutes.
Remove from the oven and let it stand for another 5 minutes with the lid on.
Gently stir the rice with a meat fork to separate the grains and add chopped coriander just before serving. Check the taste and adjust the seasoning if necessary.

70 ml Oil
100 g White onions, finely chopped
200 g Coconut flesh, skinless, cut into very fine sticks or grated
20 g Ginger, finely chopped
30 Cardamom seeds, deseeded
1 pinch Chili powder
600 g Basmati rice, washed, soaked, and then drained
5 dl Coconut milk
5 - 6 dl Chicken stock or vegetable stock
A little lime juice
Salt
Some coriander leaves, finely chopped
