Croquette Potatoes

Croquette potatoes are a delicious dish made from mashed potatoes that are mixed with ingredients like butter, cream, cheese, or seasonings, shaped into small cylindrical or oval forms, coated in breadcrumbs, and then deep-fried or baked until golden and crispy on the outside. They are often served as a side dish, appetizer, or snack and are loved for their creamy interior and crunchy exterior.

Instructions

  1. Prepare a basic duchesse mixture (items 1 - 5).

  2. Transfer the mixture into a piping bag fitted with a large plain nozzle (2cm diameter).

  3. Pipe onto a floured tray, roll, and let it rest in a cool place for about 1 hour.

  4. Cut into pieces approximately 5 cm in length.

  5. Coat with flour, dip in beaten egg, and cover with breadcrumbs. Reshape using a palette knife.

  6. Place them in a single layer in the frying basket and fry at around 190°C until golden brown.

  7. Allow to drip dry well before serving.

  • 1 kg Potatoes, peeled and grated medium fine

  • 100 g Onions, chopped

  • 2 Eggs or 4 Egg whites

  • 30 g Flour

  • A little Nutmeg

  • Salt

  • 1 tbsp Marjoram (or Thyme or Oregano), chopped

  • 2 tbsp Parsley, chopped

  • 50 g Oil
