Croquette Potatoes
Croquette potatoes are a delicious dish made from mashed potatoes that are mixed with ingredients like butter, cream, cheese, or seasonings, shaped into small cylindrical or oval forms, coated in breadcrumbs, and then deep-fried or baked until golden and crispy on the outside. Prepare a basic duchesse mixture (items 1 - 5).
Transfer the mixture into a piping bag fitted with a large plain nozzle (2cm diameter).
Pipe onto a floured tray, roll, and let it rest in a cool place for about 1 hour.
Cut into pieces approximately 5 cm in length.
Coat with flour, dip in beaten egg, and cover with breadcrumbs. Reshape using a palette knife.
Place them in a single layer in the frying basket and fry at around 190°C until golden brown.
Allow to drip dry well before serving.

100 g Onions, chopped
2 Eggs or 4 Egg whites
30 g Flour
A little Nutmeg
Salt
1 tbsp Marjoram (or Thyme or Oregano), chopped
2 tbsp Parsley, chopped
50 g Oil
