Duchess Potatoes ( Basic duchess mix )
Duchess potatoes are a classic French dish made from mashed potatoes that are mixed with butter, egg yolks, and seasonings, then piped into decorative shapes using a piping bag. They are typically baked until golden and slightly crispy on the outside, while remaining soft and creamy on the inside. Duchess potatoes are often served as an elegant side dish for special occasions or fine dining.

Instructions
Dice the potatoes into uniform cubes.
Put them in a pot, add water and salt, and bring to a boil.
Skim off any scum, cover with a lid, and cook until the potatoes are tender.
Using the lid, drain all the water and place the potatoes on a tray in a warm oven to remove excess moisture.
Mash the potatoes. Add the egg yolk and mix well. Stir in the melted butter, a small amount of nutmeg, and additional salt if needed.
Transfer the mixture into a piping bag fitted with a large star nozzle.
Pipe onto a buttered tray in spiral shapes, approximately 5cm in base diameter and 5cm in height. (Allow for 2 pieces per person).
Brush with egg wash and bake in a hot oven until the tops are golden brown.
Serve and enjoy.
