Fondant Potatoes

Fondant potatoes are a classic French dish made by browning thick slices or cylinders of potatoes in butter, then slowly roasting or braising them in stock (often chicken or vegetable) until they are tender and creamy on the inside, with a golden, crispy exterior. The dish is known for its rich, buttery flavor and elegant presentation, making it a popular choice for fine dining or special occasions.

Instructions

  1. Turn the potatoes into barrel shape, bigger than boiled potatoes.

  2. Place them in a well buttered roasting pan and add beef stock up to half level.

  3. Brush the potatoes with melted butter and cover them with a buttered grease proof paper

  4. Place in the centre of an oven (200oC) and cook for approximately 30 minutes until soft.

  5. Remove the paper for the surface to become lightly browned

  6. When cooked the stock should be absorbed completely by the potatoes

  • 1.5 kg Medium-Sized Potatoes, peeled

  • Beef Stock

  • Salt

  • 60 g Butter

  • A small amount of Basic Brown Sauce (optional)
