Mashed potatoes are a classic dish made by boiling potatoes until tender, then mashing them into a smooth or slightly chunky consistency. They are typically mixed with ingredients like butter, milk, cream, salt, and sometimes garlic or herbs for added flavor. Cut the potatoes into large pieces.
Place the potatoes in a pot or pan, cover them with water, add salt, and bring to a boil.
Simmer the potatoes with the lid on until they are cooked (test with the tip of a knife).
Once cooked, drain the water, return the potatoes to the same pan, and let them evaporate to dry.
Pass the potatoes through a food mill back into the pan and keep them warm.
Heat the milk and add it to the potato mash, whisking vigorously while adding the butter in flakes.
Taste and season if necessary.
Place the mash onto the serving dish and smooth with a palette knife, or use a piping bag.
