Instructions
Heat butter in a small pan and glaze onions - then allow to cool down
Mix all items (1 - 10) very well in a bowl until a smooth mix is obtained
Place half of it into a buttered cake mould, set the mushrooms in the centre and cover with the rest.
Flatten and smoothen the top, cover with cling film and poach it in a hot waterbath in the oven at medium heat until cooked (Needle test)
Remove from oven and allow to settle for about 10 minutes
Then slice and arrange

15 g Butter
80 g Onions, chopped
200 g Sausage meat (Beef or Pork)
A little Thyme or Marjoram, chopped
¼ Bunch Parsley, roughly chopped
300 g Beef Mince or Pork Mince (or both)
10 g Bread Crumbs
1 g Salt
Some Black Pepper
20 g Egg white
50 g Whole Mushrooms, stewed
