Meat loaf

Meat loaf is a savory dish made from ground meat—usually beef, pork, or a combination—mixed with breadcrumbs, eggs, and seasonings, then shaped into a loaf and baked. It is known for its hearty flavor and is often served sliced, sometimes with a sauce or gravy.

Instructions

  1. Heat butter in a small pan and glaze onions - then allow to cool down

  2. Mix all items (1 - 10) very well in a bowl until a smooth mix is obtained

  3. Place half of it into a buttered cake mould, set the mushrooms in the centre and cover with the rest.

  4. Flatten and smoothen the top, cover with cling film and poach it in a hot waterbath in the oven at medium heat until cooked (Needle test)

  5. Remove from oven and allow to settle for about 10 minutes

  6. Then slice and arrange

Ingredients

  • 15 g Butter

  • 80 g Onions, chopped

  • 200 g Sausage meat (Beef or Pork)

  • A little Thyme or Marjoram, chopped

  • ¼ Bunch Parsley, roughly chopped

  • 300 g Beef Mince or Pork Mince (or both)

  • 10 g Bread Crumbs

  • 1 g Salt

  • Some Black Pepper

  • 20 g Egg white

  • 50 g Whole Mushrooms, stewed
