Paprika Potatoes

Blanch Potatoes, strain spread on a tray and allow to cool.
Heat butter in a pan and glaze the Onions in Butter.
Add potatoes, Paprika and then the stock.
Add salt and pepper, cover and simmer until almost done.
Add Tomato puree and Caraway and simmer again until done.
check seasoning and present - sprinkle with Parsley.

1 liter White Stock (Chicken, Beef, or Vegetable)
150 g Tomatoes, pureed (or 60 g Tomato Paste)
