Potato Flan

Potato flan is a savory dish made from mashed or pureed potatoes combined with ingredients like eggs, cream, cheese, and seasonings. The mixture is baked until set, resulting in a creamy, custard-like texture. It is often served as a side dish or appetizer and can be flavored with herbs, spices, or additional ingredients like vegetables or bacon for added taste.

Instructions

  1. Glaze onions in butter and allow to cool.

  2. Place onions and eggs into the blender and blend until fine.

  3. Add the potatoes and blend until smooth; last add the cream and season to taste.

  4. Brush portion moulds with oil, then line with gladwrap and fill in the mixture.

  5. Poach in a hot water bath in the oven until done - cover to avoid browning.

  • 500 g Boiled Potatoes, strained and dried

  • 8 Eggs

  • 100 g White Onions, sliced

  • 50 g Butter

  • 1.5 dl Cream

  • 1 dl Milk

  • Nutmeg

  • Salt

  • Gladwrap for moulds
