Risotto

Risotto is a classic Italian dish made from Arborio or Carnaroli rice, known for its creamy texture. The rice is cooked slowly by adding broth (vegetable, chicken, or seafood) in small amounts while stirring continuously. This process releases the rice's starch, creating a rich and velvety consistency. Risotto can be flavored with various ingredients like saffron, mushrooms, seafood, vegetables, or cheese, making it a versatile and comforting meal.

Instructions

  1. Melt butter and sauté onions until they become translucent, then add rice and cook everything together for a few minutes.

  2. Add stock and seasoning, and let it simmer for around 15 minutes, or less if the rice has been pre-cooked (add more stock if needed).

  3. Spread the mixture on a large tray to a thickness of ½ inch and let it cool.

  4. Sprinkle water over the surface to prevent a skin from forming.

  • 600 g Risotto Rice, Vialone or Arborio

  • 50 ml Olive Oil

  • 1.8 L Vegetable Stock (approximate)

  • 150 g Onions

  • Salt

  • Pepper

  • Pre-cooked Risotto from above

  • 1/4 dl White Wine

  • Some Vegetable Stock (II)

  • 5 g Parmesan Cheese, grated

  • 5 g Butter
