Roast Potatoes
Roast potatoes are a classic dish made by roasting peeled or unpeeled potatoes in an oven. Wash and peel the potatoes, then cut them into the desired shape. The prepared potatoes should weigh 100 grams per portion.
Boil water (about 5 times the volume of the potatoes) and blanch the potatoes. Drain them while hot and let them steam off.
Preheat the roasting pan in a medium-hot oven, add fat, and once hot enough, add the potatoes.
Roast, stirring frequently, until they turn golden brown, then sprinkle with salt.
Once the potatoes have developed a sufficient crust, drain any excess oil and add butter in small pieces. Stir and remove after a few minutes.
Keep them hot or serve immediately.
