  1. Boil the potatoes in salted water until they are about 75% cooked.

  2. Drain the water and let the potatoes cool on a tray until they reach room temperature (avoid cooling them with cold water).

  3. Peel and coarsely grate the potatoes, seasoning them layer by layer.

  4. Pan fry the potatoes in individual portions with butter on both sides, shaping them into cakes until they are golden brown.
