Stuffing for Turkey, Chicken (X-Mas)
Stuffing for turkey or chicken is a flavorful mixture typically made with bread cubes, herbs, and seasonings. Common ingredients include onions, celery, garlic, and fresh herbs like sage, thyme, and parsley. It can also include additions like sausage, nuts, dried fruits, or vegetables for extra flavor. The stuffing is either cooked inside the bird or baked separately as a side dish, adding a savory and aromatic complement to the meal.

Melt the butter, fry the bacon and liver, then add onions and garlic to glaze.
Allow the mixture to cool.
Combine all ingredients and conduct a small fry test.
The mixture should be light and slightly firm; if it's too soft, add more crumbs as needed. If it's too firm, add some stock.
Season the inside of the chicken with a little salt and fill the body cavity with the stuffing. Tie it up and roast as usual (side/side/back).
Options for Stuffing: Instead of herb stuffing, dried fruits (prunes, apples, dates, apricots, etc.) and nuts can be used. The garlic and onions should be omitted.
Herbs can be adjusted according to the chef's preference.
When pre-cooked chestnuts are added to this stuffing, it becomes a traditional stuffing used for Christmas turkey.

40 g Butter
150 g Bacon, sliced into strips
150 g Chicken Liver, diced
100 g Onions, chopped
5 g Garlic, chopped
500 g Chicken Sausage Meat
150 g Fresh White Bread Crumbs (without crust), grated and soaked
in a small amount of milk
3 tbsp Fresh Herbs: Thyme, Sage, chopped
Rosemary, Parsley
A little Grated Lemon Zest
1 Egg or 2 Egg Whites
Salt
Crushed Black Pepper
