Sweet & Sour Pork is a popular dish featuring crispy pieces of pork tossed in a vibrant sauce made from vinegar, sugar, and ketchup, often combined with bell peppers, onions, and pineapple. The dish is known for its balanced flavors—tangy, sweet, and savory—and its colorful presentation.

Instructions

  1. Combine items 2 - 7 and add them to the pork, allowing it to marinate for 30 minutes.

  2. Beat the egg with starch and mix it with the meat once marinated.

  3. Deep fry the meat in individual pieces at 160°C until half cooked, then set aside.

  4. Heat oil and add garlic, chili, ginger, onions, followed by peppers, and gently glaze.

  5. Incorporate items 16 - 20, bring to a boil, and let simmer for 2 minutes.

  6. Add pineapple and tomatoes, then bring to a vigorous boil.

  7. Mix corn starch to thicken the sauce.

Ingredients

Marinade

  • 400 g Pork (Loin or Leg), cut into pieces measuring 20 x 40 mm

  • 2-3 pinches Salt

  • 1 pinch White pepper

  • 1 pinch MSG

  • 2 pinches Chinese Five Spice powder

  • 1 tbsp Light Soy Sauce

  • 1 tbsp Rice wine, or Sherry, or White Wine


Batter

  • 1 Egg

  • 1 Egg white

  • 50 g Corn starch


Sauce

  • 40 ml Oil

  • ½ Chilli, deseeded and chopped

  • 1 clove Garlic, chopped

  • A little fresh Ginger, chopped

  • 100 g Mixed sweet peppers, cut into large paysanne and blanched

  • 60 g Onions, diced

  • 3 dl Chicken Stock, or Pork stock

  • 40 ml Vinegar

  • A little Lemon juice

  • 20 g Tomato Paste, or 50 g Tomato ketchup

  • 40 g Sugar

  • 40 g Tomatoes, cut into large paysanne with skin on

  • 40 g Pineapple, cubed

  • 2-3 tsp Corn starch

  • ½ Bunch Dhania leaves, coarsely chopped
