Thai Fragrant Rice

Instructions
Heat the oil, then add the onions and garlic, cooking until they turn a dark yellow color.
Add the ginger and cumin, and gently cook.
Add the rice and cook gently as well, then add the stock, extract, and salt, and bring to a boil.
Cover and cook gently in the oven for about 20 - 25 minutes, until just done.
Once done, fluff the rice with a fork, mix in the coriander and lime juice, and serve.

700 g Siam Patna Rice (Thailand), free of stones, discolored grains, and other impurities - washed and drained
70 ml Oil
15 g Garlic, chopped
100 g Onions, sliced short
15 g Ginger, finely chopped
1 tbsp Cumin seeds
1.7 l Vegetable Stock
3 dl Lemongrass extract
Salt
1 bunch Coriander, chopped
A little Lime or Lemon juice
